Easy Plant-Based Tacos

Here is the recipe for EASY plant-based tacos. Any of the vegetables used can be swapped out for preference or what you have on hand.

Ingredients:

  1. 1 Eggplant

  2. 1 Sweet Potato

  3. 1 Bell Pepper (I used yellow)

  4. 1/2 medium onion (I used white onion)

  5. 1 can Garbanzo beans

  6. Fresh Garlic (I used 4 cloves)

  7. Olive Oil

  8. Nutritional Yeast

  9. Salt and Black Pepper

  10. Turmeric

  11. 1 Avocado

  12. Spinach

  13. Tortillas

  14. Shredded Cheese (I used 99% lactose free cheese made from almonds. From Trader Joe's!)

Directions:

  1. Pre-heat oven to 400 degrees.

  2. Apply non-stick cooking spray to 2 cookie sheets.

  3. Dice eggplant, sweet potato, and pepper, into small cubes (I did about 1/2 inch) and put into a large mixing bowl.

  4. Finely chop onion and garlic, add to bowl.

  5. Drain garbanzo beans, add to bowl.

  6. Season with olive oil, salt, black pepper, turmeric, and nutritional yeast (Nutritional Yeast also from Trader Joe's!)

  7. Mix together

  8. Evenly distribute mixture to cookie sheets. Bake for about 10-15 minutes, toss the mixture, and bake for another 10-15 minutes or until all vegetables are soft and/or beginning to crisp.

  9. Assemble your taco. I used flour, spinach tortillas, shredded lactose free cheese, spinach, and avocado. Option to use hot sauce!
